Cheesy Garlic Mashed Potato Bites

Yesterday I posted my recipe for garlic redskin mashed potatoes, and I promised you another recipe today using the leftovers. Cooking for two people can sometimes be a challenge for me. I always seem to make way too much food. Because of this, I love coming up with creative ways to use leftovers.

I’ve made my mashed potato recipe about a gazillion times now, so I have the measurements figured out pretty well for just the two of us. But whenever we do end up with leftovers, I love turning them into these mashed potato bites. I discovered this awesome idea on The Kitchn. They’re super easy to throw together, and they make the perfect little finger food for snacking on. Sometimes I purposely make extra mashed potatoes just so we can enjoy these little bites later in the week. You could certainly use fresh mashed potatoes made just for this recipe if you want, but it’s a great way to use up leftovers if you do have some.

My mom used to always make potato pancakes using leftover mashed potatoes. This recipe kind of reminds me of those except in cheesy bite sized pieces. Speaking of potato pancakes, my husband and I love the ones they serve at our favorite German restaurant. They always come with a side of applesauce and sour cream. My husband absolutely loves the combination of the applesauce with the potato pancakes. He even dips these mashed potato bites in applesauce. It sounds strange, but it’s actually pretty tasty.

I will be showing you how to make these using garlic redskin mashed potatoes (recipe here); however, you could make these using any variation you’d like. Another great idea would be loaded mashed potato bites using bacon, chives, sour cream, and cheddar cheese. We usually make these just to enjoy ourselves, but they also make a great party appetizer.

What You’ll Need

  • 2 cups of garlic redskin mashed potatoes (or any mashed potatoes you’d like)
  • 3 eggs, beaten
  • 1/4 cup chopped green onion
  • 1 cup shredded cheddar cheese, plus more for topping
  • sour cream (optional)


Preheat oven to 400 degrees.
Start by combining your mashed potatoes and eggs in a large bowl. Mix in green onion and shredded cheese and stir until combined.

Spray a mini muffin tin lightly with cooking spray. Fill each cup with a spoonful of the mashed potato mixture.

Place in preheated oven and bake for 15 minutes. Remove from oven and sprinkle a pinch of cheddar cheese on top of each mashed potato bite. Return to oven and continue baking for another 5 minutes.
Remove from oven and let cool for a few minutes. Serve immediately. Top with sour cream if desired.

Garlic Mashed Potato Bites

Servings 24 bites

  • 2 cups mashed potatoes
  • 3 eggs, beaten
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/4 cup green onion, chopped
  • sour cream (optional)


  1. Preheat oven to 400 degrees.

  2. In a large mixing bowl, combined mashed potatoes and eggs.

  3. Add in cheese and  green onion. Stir until combined.

  4. Lightly grease a mini muffin tin.

  5. Fill each muffin cup with a spoonful of mashed potato mixture.

  6. Bake for 15 minutes. Remove from oven and add a pinch of cheese on top of each potato bite. 

  7. Continue baking for another 5 minutes.
