Mango Coconut Smoothie

Wow, what a week it has been here in the Stark household. Between a three day power outage and both my husband and I getting sick in the midst of it, we’ve certainly been having a time over here. Thank God for our parents who gave us hot meals and a place to shower, and thank God for my husband who kept our water supply stocked and our generator running while dealing with his own illness. Luckily, the power is back on today and we’re both finally starting to recover. I’m beyond happy to feel like myself again, and especially to have running water.

After living in the dark for the past few days, I was anxious to get back into my normal routine and back into my kitchen. I love spending time on the weekends experimenting with yummy new dishes, so that’s exactly what I started doing as soon as the power came back on. Yesterday I did some meal prep and made these lovely crunchy Thai noodle salads from The Glowing Fridge. These are sure to set me up for success this week!

This morning I started my day off right with this easy and delicious mango coconut smoothie. I love smoothies pretty much all the time, but I also really love them when I’m not feeling well. Kind of like chicken noodle soup, there’s just something about a cold smoothie that makes me feel better when I’m sick. I think it’s because they are a great way to get plenty of nutrients in even when you don’t have much of an appetite, plus they are always refreshing and soothing on a sore throat.

It only takes three ingredients to throw this one together – frozen mango, bananas, and coconut milk. The result is ultra creamy and refreshing mango goodness with just a hint of coconut. It’s bright, tropical flavor kind of tastes like summertime in a glass, like something you should be drinking poolside or on a beach somewhere. If this sounds good to you, then this smoothie should be right up your alley.

Lately I’ve been experimenting with some dairy free ice creams using coconut cream, which is the solid portion inside a can of coconut milk. Whenever I use only the coconut cream, I save the the liquid portion inside the can to use in smoothies later. This is what I used for the coconut milk in this recipe.

What You’ll Need

  • 2 cups frozen mango chunks
  • 2 bananas
  • 2 cups coconut milk
  • Coconut flakes for topping (optional)

To make this smoothie, simply toss in a blender the mango chunks, bananas, and coconut milk and blend until smooth. Pour into two glasses and top with coconut flakes if desired.

If you read my post yesterday 35 Self Care Ideas, then you know that I’m trying to make a lifestyle change that includes eating more nourishing foods. I’d say that this smoothie falls into that category, so I didn’t feel bad about drinking the whole thing myself this morning 🙂

  • 2 ripe bananas
  • 2 cups coconut milk
  • coconut flakes for topping (optional)


  1. Place all ingredients in a blender and blend until smooth. Top with coconut flakes if desired.
