Here in Michigan we have an abundance of Coney Island restaurants. Each one is a little different, but they all serve pretty similar food. They’ll have coney dogs of course, which is a hot dog with chili, mustard, and diced onions. They’ll also have lots of Greek inspired foods like gyros, Greek salads, saganaki, and more. No matter where you go in the metro Detroit area, you won’t be far from a Coney restaurant.
There are a few that my husband and I eat at on a regular basis. Our go-to meal is usually a Greek or Caesar salad with chicken. Last year we discovered a new twist on a salad we love from a place called Greek Islands – the Hummus Greek Salad. It’s basically a warm piece of pita bread spread with hummus, then piled high with a Greek salad and topped off with grilled chicken. And yes, it is just as amazing as it sounds.
Naturally, we had to try our hand at making these ourselves, and I’m happy to share that they came out perfectly! It’s super easy to throw together, and an interesting twist on a regular grilled chicken salad. The great thing about this kind of food is that it’s also super easy to make vegetarian. This weekend my husband Robby and I made one of our favorite meals of all time – barbecue chicken nachos. We started making these a couple of years ago, and we have been hooked ever since. We literally cannot get enough of them. This usually ends up being our Friday night cheat meal, and honestly I think we both love it even more than going out to eat.
I simply cannot express enough how much I love these nachos. If you’ve never made nachos this way before, you definitely need these in your life. And I am SO excited to introduce them to you!
You don’t need much to make these nachos. Just make sure you have some chicken and your favorite barbecue sauce as well as plenty of tortilla chips and cheese. The rest of the toppings can be adjusted to your preferences.
Making these couldn’t be easier. We always assemble them on a foil-lined cookie sheet and bake in the oven for about 10 minutes. Sometimes in the summer we will make them in little foil pouches and throw them on the grill. Doing it this way also makes for an AWESOME camping recipe! You come home from work. You’re tired, hungry, and you have no idea what to make for dinner. You don’t want to order out again, but you don’t feel like chopping up a bunch of veggies and you don’t have any meat thawed out. You want something quick and easy, but not boring either.
We all have those days. While I try to meal plan as much as possible to avoid these situations, it still happens. That’s why I try to keep a rotation of easy and delicious dinner ideas in my back pocket. You’ll want to make sure you have a few basic staples on hand at all times. Dry pasta, canned sauces, a few types of veggies, stuff like that.
