Here in Michigan we have an abundance of Coney Island restaurants. Each one is a little different, but they all serve pretty similar food. They’ll have coney dogs of course, which is a hot dog with chili, mustard, and diced onions. They’ll also have lots of Greek inspired foods like gyros, Greek salads, saganaki, and more. No matter where you go in the metro Detroit area, you won’t be far from a Coney restaurant.
There are a few that my husband and I eat at on a regular basis. Our go-to meal is usually a Greek or Caesar salad with chicken. Last year we discovered a new twist on a salad we love from a place called Greek Islands – the Hummus Greek Salad. It’s basically a warm piece of pita bread spread with hummus, then piled high with a Greek salad and topped off with grilled chicken. And yes, it is just as amazing as it sounds.
Naturally, we had to try our hand at making these ourselves, and I’m happy to share that they came out perfectly! It’s super easy to throw together, and an interesting twist on a regular grilled chicken salad. The great thing about this kind of food is that it’s also super easy to make vegetarian.
